Strawberry Cheesecake Bites for Love Day

Valentines Day is one of my best holidays. The entire world needs a whole lot more loving everyday. Spread the love around and be kind to everyone, especially the ones who don't deserve it. 
Love is in the air on the Morgan Family Farm, especially with baby Sunshine. She's the calf that lost her mother. Her bottle feeding continues and she's doing well. How precious is she with her bow?
Between bottle feeding Sunshine, I'm preparing for the Marriage Conference our church is putting on. I'm in charge of the table decorations and my famous Caesars Salad.  I'll post those next week. In the meantime, I wanted to share these yummy Strawberry Cheesecake Bites for Love Day. You can make these for your Valentines. I've even made them for engagement parties. They are always a hit.

Warning: Strawberry Cheesecake Bites are highly addictive. Eat at your own risk.

What You'll Need:


For the crust:
1 3/4 Graham Cracker Crumbs
3 T. Sugar
3 T. Melted Butter

For the Filling:
4 8oz. Packages of Cream Cheese (softened)
1 1/4 C. Sugar
1/4 C. All Purpose Flour
3 Eggs (room temp)
1 T. Vanilla
1/2 C. Sour Cream

For the Topping:
1 1/2 C. Sour Cream
1/4 C. Honey
1 t. Vanilla
Sliced Strawberries

(Yields 54 bites of goodness)

Directions:

Preheat oven to 325 degrees. Line a 13x9x2 inch baking pan, with heavy duty foil, leaving 1 inch of the foil hanging over the edges of pan. Set aside.

For the graham cracker crust: In a medium bowl combine cracker crumbs and 3 T. Sugar. Stir in melted butter until combined. 

Press mixture into bottom of prepared pan.

For the cheesecake filing, in a large bowl beat cream cheese and sugar with an electric mixer on medium-high speed until fluffy. Beat in flour until combined. Add eggs and vanilla and beat on low speed until combined.

Stir in sour cream. Pour filling into crust-lined pan. Bake 40 min.

For the sour cream, honey topping: In a medium bowl stir together sour cream, honey, and vanilla. Remove cheesecake from the oven and spread the sour cream mixture over top. Bake 10 min. more.
Cool in pan on a wire rake for one hour. Cover and refrigerate for at least four hours.

After chilling, use foil to remove from pan. Cut into 54 bites. Best way to cut is by dipping your knife into hot water and wiping after each cut. 

Top each bite with a strawberry slice. If desired, drizzle with honey. These are super cute served in a cupcake liner. Enjoy!
