Artic air has hit the Morgan Family Farm. Subzero wind gusts come sweeping down the plains of Oklahoma. With the cold air comes freezing water. All the critters on the farm still need a drink and something to eat. Anybody who knows even a little about farm life, is familiar with breaking the ice for the animals in the winter. The farm is a beautiful place to live, but their is a cost.
Besides the endless icebreaking, there is another, even more important, chore on the farm....tending to the fire. My Billy and I heat our home with a woodstove. Cutting, stacking and burning firewood is one way we save on heating. Besides there is nothing better than warming up to a fire after breaking ice.
The morning chores are such a busy time for us that cooking a large breakfast isn't always reasonable. I bake up a batch of this yummy maple granola bark and eat it on the go. You can eat it with milk as a cereal or my favorite.......inside a cup of yogurt.

What You'll Need:
2/3 c. Maple Syrup
2 tsp. Vanilla Extract
1/2 c. Olive Oil
1 lg. Egg White
1/2 tsp. Salt
3 c. Old-Fashioned Oats
1 c. Roasted, Salted Almonds, Coarsely Chopped
1/2 c. Sunflower Seeds
1/2 c. Almond Flour
1 1/2 tsp. Ground Cinnamon
1/2 tsp. Pumpkin Spice
Directions:
Preheat oven 350 Degree. Line lg. baking sheet with parchment paper.
In a medium bowl, combine maple syrup, vanilla, olive oil, egg white and salt.
In a large bowl, combine oats almonds, sunflower seeds, almond flour and spices.
Add maple syrup mixture to dry ingredients and mix thoroughly.
Evenly press mixture onto prepared baking sheet using back of spoon or wet hands.
Bake until golden on edges, 25 to 30 minutes, opening oven door twice to release steam and rotating pan once halfway through. Do not stir.
Let cool in pan on wire rack 1 hour before breaking into chunks.
Serve with milk and fruit or inside your favorite yogurt. Store in airtight container at room temp. up to a week.
